Ingredients:
250g butter, softened
125ml castor sugar (105g)
625ml Cake Flour (350g)
125 ml Corn Flour (650g)
2ml Salt
Extra castor sugar for sprinkling
Preparation:
1. Beat butter and castor sugar until light and fluffy.
2. Sift the remaining ingredients and add.
3. Knead lightly and press into a greased 16cm x 26cm lamington tin.
4. Prick very well and bake in preheated oven at 130 degrees C for about 1 hour.
5. Cut into fingers while still hot and sprinkle lightly with castor sugar.
