Date and Nut Loaf

This scrumptious loaf is a delicate blend of sweet dates and crunchy pecan nuts, yielding a decadent and sophisticated treat. The perfect combination of its tender texture and rich, flavor-filled taste leaves the taste buds yearning for more. This tried and tested recipe never fails to impress!


Ingredients:


125 grams butter (softened to room temperature)
110 grams castor sugar
200 grams dates (pitted and chopped)
200 ml full cream milk (at room temperature)
15 ml golden syrup
260 grams self-raising flour (sifted)
2 jumbo eggs
60 grams pecan nuts (chopped)


Preparation:


1. Preheat oven to 180 degrees Celsius
2. Line the base of a loaf tin (35 x 13 cm) with parchment paper and spray with cooking spray. Set aside.
3. In a heavy-based, large saucepan, heat the butter, castor sugar, dates, milk and golden syrup over medium heat.
4. Stir the mixture until the sugar dissolves and the butter melts.
5. Place the lid over the saucepan and allow to simmer over medium heat for 2-3 minutes.
6. Remove the saucepan from the heat and stir in the flour, eggs and nuts. Mix thoroughly until all ingredients are combined.
7. Spoon the batter into the prepared loaf tin and bake for 50-60 minutes or once a skewer inserted into the center comes out clean.
8. Remove from the oven and allow to cool in the tin for 7-10 minutes.
9. Allow to cool on a wire rack.

Serving Suggestion: Serve sliced and spread with butter or cream cheese.
Storage: This loaf will stay in an airtight container for up to 3 days.
